Copycat Perfect Bars

Copycat Perfect Bars
Yield: 6 servings
Author: Hannah Thompson, RDN, LD, CPT
Prep time: 10 MinInactive time: 2 HourTotal time: 2 H & 10 M

Ingredients

  • 1 1/2 cups oat flour (blend 1 1/2 cups of oats until it is a fine powder)
  • 1/2 cup peanut butter
  • 1/3 cup vanilla protein powder
  • 1/4 cup milk or milk alternative
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup chocolate chips
  • Dash of salt

Instructions

  1. In a bowl, combine oat flour, protein powder, and salt.
  2. Add in peanut butter, vanilla extract, and syrup. I find it easiest to mix with my hands.
  3. Add in the milk. The mixture should be dense and somewhat hard to combine.
  4. Fold in chocolate chips.
  5. Press FIRMLY into a parchment paper lined dish. I like to use an 8"x8" glass dish.
  6. Freeze for 2 hours or until firm. Cut bars into desired size. Store in freezer or refrigerator.

Notes

  • Make sure you use a protein powder that you can drink straight. The flavor of the powder is very prevalent in the bars.
  • You may want to add more chocolate chips to the top of the bars before freezing.
  • Be sure to press FIRMLY on the bars before freezing to ensure that they will stay together when served.
