Copycat Perfect Bars
Yield: 6 servings
Author: Hannah Thompson, RDN, LD, CPT
Prep time: 10 MinInactive time: 2 HourTotal time: 2 H & 10 M
Ingredients
- 1 1/2 cups oat flour (blend 1 1/2 cups of oats until it is a fine powder)
- 1/2 cup peanut butter
- 1/3 cup vanilla protein powder
- 1/4 cup milk or milk alternative
- 1/3 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/4 cup chocolate chips
- Dash of salt
Instructions
- In a bowl, combine oat flour, protein powder, and salt.
- Add in peanut butter, vanilla extract, and syrup. I find it easiest to mix with my hands.
- Add in the milk. The mixture should be dense and somewhat hard to combine.
- Fold in chocolate chips.
- Press FIRMLY into a parchment paper lined dish. I like to use an 8"x8" glass dish.
- Freeze for 2 hours or until firm. Cut bars into desired size. Store in freezer or refrigerator.
Notes
- Make sure you use a protein powder that you can drink straight. The flavor of the powder is very prevalent in the bars.
- You may want to add more chocolate chips to the top of the bars before freezing.
- Be sure to press FIRMLY on the bars before freezing to ensure that they will stay together when served.
