Chocolate Chip Pumpkin Bread

Chocolate Chip Pumpkin Bread

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/2 cup canola oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups semi sweet chocolate chips

Instructions

  1. Preheat oven to 350F. Great an 8x4 inch loaf pan and line with parchment paper. Set aside.
  2. In a bowl, whisk together flour, salt, baking powder, baking soda, and pumpkin pie spice. Set aside.
  3. In a separate bowl, whisk together pumpkin puree, brown sugar, granulated sugar, canola oil, eggs, and vanilla extract.
  4. Stir dry ingredients into the wet ingredients, mixing until just combined.
  5. Fold in chocolate chips.
  6. Pour batter into the prepared loaf pans. Bake for 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  7. Cool for at least 10 minutes before removing from loaf pan.
