Chocolate Peanut Butter Rice Cake Crunch Balls

Chocolate Peanut Butter Rice Cake Crunch Balls

Ingredients

  • 1/2 cup peanut butter
  • 1/8 cup vanilla protein powder
  • 3 rice cakes, crumbled up into very small pieces
  • 3/4 cup chocolate chips
  • 1 Tbsp coconut oil

Instructions

  1. In small mixing bowl, combine peanut butter and protein powder. Fold in crumbled rice cakes.
  2. Using your hands, roll into 1-inch balls. Set aside.*
  3. In a microwave safe bowl, melt chocolate chips with coconut oil in 30 second increments, stirring in between until chocolate is fully melted.
  4. Using a fork, drop peanut butter balls into melted chocolate and coat entirely.
  5. Place on parchment paper to harden. Top with course salt, if desired.

Notes

*To make the balls easier to handle, refrigerate for an hour or 2 before dipping them in the chocolate.
