Chocolate Peanut Butter Rice Cake Crunch Balls

Ingredients
- 1/2 cup peanut butter
- 1/8 cup vanilla protein powder
- 3 rice cakes, crumbled up into very small pieces
- 3/4 cup chocolate chips
- 1 Tbsp coconut oil
Instructions
- In small mixing bowl, combine peanut butter and protein powder. Fold in crumbled rice cakes.
- Using your hands, roll into 1-inch balls. Set aside.*
- In a microwave safe bowl, melt chocolate chips with coconut oil in 30 second increments, stirring in between until chocolate is fully melted.
- Using a fork, drop peanut butter balls into melted chocolate and coat entirely.
- Place on parchment paper to harden. Top with course salt, if desired.
Notes
*To make the balls easier to handle, refrigerate for an hour or 2 before dipping them in the chocolate.
