Cowboy Caviar

Ingredients

  • 1 (14.5 oz) can black beans, drained and rinsed
  • 1 (14.5 oz) can corn, drained and rinsed
  • 2 roma tomatoes, diced
  • 1 bell pepper, diced
  • 1/2 cup cilantro, roughly chopped
  • 1/2 red onion, diced
  • juice of 1/2 lime
  • salt and pepper, to taste

Instructions

  1. Add all ingredients to a large mixing bowl. Stir to combine.
  2. Serve with tortilla chips or as a topping to tacos, quesadillas, etc.
