Chocolate Peanut Butter Rice Cake Bars

Ingredients
- 1/2 cup peanut butter
- 2 Tbsp honey
- 1/4 cup almonds or peanuts, roughly chopped
- 6 plain rice cakes, crumbled with hands
- 2/3 cup milk chocolate chips
- 1 Tbsp coconut oil
- course salt or flake salt, optional
Instructions
- In a mixing bowl, combine peanut butter, honey, almonds or peanuts, and crumbled rice cakes.
- Press the mixture into a loaf pan lined with parchment paper. Be sure to press firmly so that the mixtures will stay intact.
- In a microwave safe container, melt chocolate chips and coconut oil in the microwave in 30 second intervals, stirring in between.
- Pour melted chocolate over the bars in the loaf pan. Sprinkle salt on top, if desired.
- Refrigerate for 2 hours, or until chocolate hardens.
- Store in the refrigerator. Enjoy within a week for the best texture.
