Chocolate Peanut Butter Rice Cake Bars

Chocolate Peanut Butter Rice Cake Bars

Ingredients

  • 1/2 cup peanut butter
  • 2 Tbsp honey
  • 1/4 cup almonds or peanuts, roughly chopped
  • 6 plain rice cakes, crumbled with hands
  • 2/3 cup milk chocolate chips
  • 1 Tbsp coconut oil
  • course salt or flake salt, optional

Instructions

  1. In a mixing bowl, combine peanut butter, honey, almonds or peanuts, and crumbled rice cakes.
  2. Press the mixture into a loaf pan lined with parchment paper. Be sure to press firmly so that the mixtures will stay intact.
  3. In a microwave safe container, melt chocolate chips and coconut oil in the microwave in 30 second intervals, stirring in between.
  4. Pour melted chocolate over the bars in the loaf pan. Sprinkle salt on top, if desired.
  5. Refrigerate for 2 hours, or until chocolate hardens.
  6. Store in the refrigerator. Enjoy within a week for the best texture.
