Ingredients

  • 1/2 cup oats
  • 1/2 cup milk of choice
  • pinch of salt
  • 1/2 tsp baking soda
  • 1/4 cup vanilla protein powder
  • 1/4 cup pumpkin puree
  • 1 tsp brown sugar
  • 2 Tbsp white chocolate chips
  • maple syrup, optional

Instructions

  1. Preheat oven to 400F.
  2. Combine oats, milk, salt, baking soda, protein powder, pumpkin puree, and brown sugar in a blender. Blend until smooth.
  3. Pour mixture into an oven-safe container. Top with white chocolate chips. Bake for 7-12 minutes, or until batter is cooked through. Drizzle with maple syrup before serving, if desired.
