Stuffed Baked Potato

Stuffed Baked Potato

Ingredients

  • 1 white potato
  • 3 oz chicken, cooked and shredded
  • 1 Tbsp butter
  • sprinkle of cheese
  • sour cream or plain Greek yogurt
  • salt and pepper, to taste
  • cilantro for garnish, if desired

Instructions

  1. Wrap potato in aluminum foil. Place in cold oven. Turn oven on and set temperature to 385F.
  2. Bake for 45-60 minutes, or until potato is soft.
  3. Cut potato in half length-wise. Add butter, salt, and pepper.
  4. Add cheese, chicken, sour cream or plain Greek yogurt, and cilantro (if desired).
  5. Enjoy immediately.

Notes

You can use any toppings that you would like!


To meal prep, bake as many potatoes as you will need and simply reheat them before adding the toppings on the day you will be enjoying them.
