Street Corn Pasta Salad

Street Corn Pasta Salad
Yield: 6-8 servings

Ingredients

  • 2 cups pasta, cooked
  • 1 (15.25 oz) can whole kernel corn, drained and rinsed
  • 1 (15.25 oz) can black beans, drained and rinsed
  • 1/4 cup green onion, thinly diced
  • 1/3 cup mayonnaise
  • 1/3 cup plain Greek yogurt or sour cream
  • 1/3 cup cotija cheese, crumbled
  • 2-3 Tbsp Tajin

Instructions

  1. In a large mixing bowl, add all ingredients and stir until combined.
  2. Store in the fridge for 3-5 days.

Notes

For an additional protein boost, use chickpea or lentil pasta. This would also make it a gluten-free option!
