Street Corn Pasta Salad
Yield: 6-8 servings
Ingredients
- 2 cups pasta, cooked
- 1 (15.25 oz) can whole kernel corn, drained and rinsed
- 1 (15.25 oz) can black beans, drained and rinsed
- 1/4 cup green onion, thinly diced
- 1/3 cup mayonnaise
- 1/3 cup plain Greek yogurt or sour cream
- 1/3 cup cotija cheese, crumbled
- 2-3 Tbsp Tajin
Instructions
- In a large mixing bowl, add all ingredients and stir until combined.
- Store in the fridge for 3-5 days.
Notes
For an additional protein boost, use chickpea or lentil pasta. This would also make it a gluten-free option!
