Pumpkin French Toast Bake

Ingredients

  • 1 loaf French bread, roughly cut into 1-inch cubes
  • 1 cup pumpkin purée
  • 3/4 cup brown sugar
  • 2 tsp pumpkin pie spice
  • 6 eggs
  • 2 and 1/3 cups milk
  • 2 tsp vanilla extract
Crumb topping
  • 1/3 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 6 tsp unsalted butter, cold and cubed
  • 3/4 cup roughly chopped pecans or walnuts

Instructions

  1. Spray a 9x13 inch pan with non-stick spray. Place bread cubes into pan.
  2. Whisk together pumpkin puree, brown sugar, pumpkin pie spice, eggs, milk, and vanilla. Pour over bread cubes. Allow to sit in the fridge for a few hours or overnight so bread can soak up the pumpkin custard.
  3. To create the crumb topping, add brown sugar, flour, and cinnamon to a mixing bowl. Add in cubes of butter and cut butter into brown sugar mixture using two forks or pastry cutter. Mix in nuts. Allow mixture to sit in the fridge (NOT on top of bread mixture) until ready to bake.
  4. Preheat oven to 350F. Place crumb topping on bread mixture. Bake for 30-40 minutes, covering with foil halfway through.
  5. Top with syrup before serving, if desired.
