Stuffed Pepper Skillet

Ingredients
- 2 Tbsp olive oil
 - 1 medium white onion, diced
 - 2 Tbsp minced garlic
 - 1 lb ground Italian sausage or chorizo
 - 2 cups chopped bell peppers or poblano peppers
 - 2 cups chicken broth
 - 1 cup tomato sauce or salsa
 - 1 cup white rise, rinsed
 - salt and pepper to taste
 - 1 cup shredded colby jack or cheddar cheese
 - 1/4 cup cotija cheese, crumbled (optional)
 - green onion or cilantro for garnish (optional)
 
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until nearly translucent. Add garlic and cook until fragrant (about 1-2 minutes).
 - Add sausage and cook through. Add peppers and cook until tender (about 5 minutes).
 - Add broth and using a wooden or silicone to scrape any browned bits off the bottom of the pan.
 - Add tomato sauce or salsa, salt, and pepper. Add the rice. Stir well and bring to a simmer. Cover the skillet and reduce the heat slightly. Simmer for 15-20 minutes, or until the rice is cooked through.
 - Sprinkle the shredded cheese and cotija on top, cover and let rest for 5 minutes to allow the cheese to melt.
 - Garnish with green onion or cilantro.
