Stuffed Pepper Skillet

Stuffed Pepper Skillet

Ingredients

  • 2 Tbsp olive oil
  • 1 medium white onion, diced
  • 2 Tbsp minced garlic
  • 1 lb ground Italian sausage or chorizo
  • 2 cups chopped bell peppers or poblano peppers
  • 2 cups chicken broth
  • 1 cup tomato sauce or salsa
  • 1 cup white rise, rinsed
  • salt and pepper to taste
  • 1 cup shredded colby jack or cheddar cheese
  • 1/4 cup cotija cheese, crumbled (optional)
  • green onion or cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until nearly translucent. Add garlic and cook until fragrant (about 1-2 minutes).
  2. Add sausage and cook through. Add peppers and cook until tender (about 5 minutes).
  3. Add broth and using a wooden or silicone to scrape any browned bits off the bottom of the pan.
  4. Add tomato sauce or salsa, salt, and pepper. Add the rice. Stir well and bring to a simmer. Cover the skillet and reduce the heat slightly. Simmer for 15-20 minutes, or until the rice is cooked through.
  5. Sprinkle the shredded cheese and cotija on top, cover and let rest for 5 minutes to allow the cheese to melt.
  6. Garnish with green onion or cilantro.
