Pulled Pork Sheet Pan Nachos

Pulled Pork Sheet Pan Nachos

Ingredients

For the pulled pork
  • 1 lb pork loin
  • juice from one orange or 1/2 cup orange juice
  • juice from 1/2 lime
  • salt, pepper, garlic powder, and onion powder to taste
For the nachos
  • 1 (12 oz) bag of tortilla chips
  • 1 lb pulled pork (see above)
  • 2 cups shredded cheese
  • desired toppings - diced tomato, avocado, sour cream or plain Greek yogurt, jalapeños

Instructions

For the pulled pork
  1. Place the pork loin, orange juice, lime juice, and seasonings in Instant Pot.
  2. Cover the Instant Pot with the lid and ensure that it is sealed.
  3. Click the manual button and turn it to 45 minutes.
  4. Do the quick pressure release to release the pressure.
  5. Remove the pork from cooking liquid and shred the pork.
For the nachos
  1. Preheat oven to 375F. Line a sheet pan with aluminum foil and spray with non-stick spray.
  2. Arrange tortilla chips on pan. Top with cooked pulled pork and shredded cheese. Bake for 10 minutes or until cheese is melted.
  3. Add desired toppings and serve.
