Ingredients
For the pulled pork
- 1 lb pork loin
- juice from one orange or 1/2 cup orange juice
- juice from 1/2 lime
- salt, pepper, garlic powder, and onion powder to taste
For the nachos
- 1 (12 oz) bag of tortilla chips
- 1 lb pulled pork (see above)
- 2 cups shredded cheese
- desired toppings - diced tomato, avocado, sour cream or plain Greek yogurt, jalapeños
Instructions
For the pulled pork
- Place the pork loin, orange juice, lime juice, and seasonings in Instant Pot.
- Cover the Instant Pot with the lid and ensure that it is sealed.
- Click the manual button and turn it to 45 minutes.
- Do the quick pressure release to release the pressure.
- Remove the pork from cooking liquid and shred the pork.
For the nachos
- Preheat oven to 375F. Line a sheet pan with aluminum foil and spray with non-stick spray.
- Arrange tortilla chips on pan. Top with cooked pulled pork and shredded cheese. Bake for 10 minutes or until cheese is melted.
- Add desired toppings and serve.
