Peanut Butter Banana Baked Oatmeal Cups

Ingredients
- 3 cups oats
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
- 1.5 cups milk
- 1/4 cup honey
- 2 Tbsp chia seeds
- 1 tsp vanilla extract
- 2 Tbsp peanut butter
- 2 mashed bananas
- 1/2 cup semi-sweet chocolate chunks
Instructions
- Preheat oven to 350F.
- In a large mixing bowl, combine oats, cinnamon, baking powder, and salt. Set aside
- In a medium mixing bowl, combine milk, honey, chia seeds, vanilla, and mashed bananas. Whisk to combine.
- Add wet ingredients to dry ingredients. Incorporate peanut butter. Fold in chocolate chunks.
- Pour into large muffin tin prepared with cooking spray. Bake for 30 minutes.
- Store in the fridge or freezer.
Notes
- You can substitute the chia seeds for flax seed or an egg.
- Use any milk or milk alternative that you prefer.
- You can use maple syrup or any other sweetener in place of the honey, or you can leave it out.
