Peanut Butter Banana Baked Oatmeal Cups

Ingredients

  • 3 cups oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1.5 cups milk
  • 1/4 cup honey
  • 2 Tbsp chia seeds
  • 1 tsp vanilla extract
  • 2 Tbsp peanut butter
  • 2 mashed bananas
  • 1/2 cup semi-sweet chocolate chunks

Instructions

  1. Preheat oven to 350F.
  2. In a large mixing bowl, combine oats, cinnamon, baking powder, and salt. Set aside
  3. In a medium mixing bowl, combine milk, honey, chia seeds, vanilla, and mashed bananas. Whisk to combine.
  4. Add wet ingredients to dry ingredients. Incorporate peanut butter. Fold in chocolate chunks.
  5. Pour into large muffin tin prepared with cooking spray. Bake for 30 minutes.
  6. Store in the fridge or freezer.

Notes

  • You can substitute the chia seeds for flax seed or an egg.
  • Use any milk or milk alternative that you prefer.
  • You can use maple syrup or any other sweetener in place of the honey, or you can leave it out.
