Easy Kale Pesto

Ingredients
- 1/2 cup pepitas
- 1 Tbsp minced garlic
- 1/4 cup grated parmesan
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups kale
- 2 Tbsp lemon juice
- 1/2 cup olive oil
Instructions
- In a food processor, blend pepitas and garlic. Add parmesan, salt, pepper, kale, and lemon juice and blend. While food processor is running, slowly add olive oil until combined and smooth.
Notes
Freeze extras in an ice cube tray and add to future dishes.
