Ingredients

  • 2 Tbsp olive oil
  • 1 lb ground beef
  • 1 small white onion, diced
  • 2 Tbsp minced garlic
  • 1 (1 oz) taco seasoning packet
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn kernels, drained and rinsed
  • 1 (15 oz) can diced tomatoes
  • 1 (4.5 oz) can green chiles
  • 1/4 cup tomato paste
  • 3 cups beef broth
  • salt and pepper, to taste
  • desired toppings (tortilla chips, shredded cheese, cilantro, sour cream, avocado, etc.)

Instructions

  1. Add olive oil to a pan over medium heat. Add diced onion and cook until translucent, about 3 minutes. Add ground beef and cook until beef is no longer pink. Add minced garlic and taco seasoning and combine. Remove from heat.
  2. In a Crock Pot, add black beans, corn, diced tomatoes (with the juice), green chiles (with the juice), tomato paste, and beef broth. Add in ground beef mixture.
  3. Allow to cook for 8 hours on low or 4 hours on high.
  4. Serve with desired toppings.
