Ingredients
- 2 Tbsp olive oil
- 1 lb ground beef
- 1 small white onion, diced
- 2 Tbsp minced garlic
- 1 (1 oz) taco seasoning packet
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn kernels, drained and rinsed
- 1 (15 oz) can diced tomatoes
- 1 (4.5 oz) can green chiles
- 1/4 cup tomato paste
- 3 cups beef broth
- salt and pepper, to taste
- desired toppings (tortilla chips, shredded cheese, cilantro, sour cream, avocado, etc.)
Instructions
- Add olive oil to a pan over medium heat. Add diced onion and cook until translucent, about 3 minutes. Add ground beef and cook until beef is no longer pink. Add minced garlic and taco seasoning and combine. Remove from heat.
- In a Crock Pot, add black beans, corn, diced tomatoes (with the juice), green chiles (with the juice), tomato paste, and beef broth. Add in ground beef mixture.
- Allow to cook for 8 hours on low or 4 hours on high.
- Serve with desired toppings.
