Chocolate Zucchini Bread

Chocolate Zucchini Bread

Ingredients

  • 3 eggs
  • 1.5 cups sugar
  • 1/2 cup oil (I used canola)
  • 1 cup plain Greek yogurt or sour cream
  • 3 cups grated zucchini
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Grease two loaf pans (or 1 loaf pan and 6 muffin tin slots)
  2. In a large bowl, combine eggs, sugar, oil, plain Greek yogurt, zucchini, and vanilla extract. Mix well.
  3. In a separate bowl, combine flour, cocoa powder, baking soda, and salt. Add combination to the liquid ingredients and stir to combine. Add chocolate chips.
  4. Pour batter into prepared pans. Bake for 60 minutes or until a toothpick is inserted into the middle of the loaf and comes out clean.
  5. Remove from pans and allow to cool.

Notes

Zucchini bread freezes well! Wrap in aluminum foil and keep in freezer if you have extra.
