Chocolate Zucchini Bread

Ingredients
- 3 eggs
- 1.5 cups sugar
- 1/2 cup oil (I used canola)
- 1 cup plain Greek yogurt or sour cream
- 3 cups grated zucchini
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1.5 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees F. Grease two loaf pans (or 1 loaf pan and 6 muffin tin slots)
- In a large bowl, combine eggs, sugar, oil, plain Greek yogurt, zucchini, and vanilla extract. Mix well.
- In a separate bowl, combine flour, cocoa powder, baking soda, and salt. Add combination to the liquid ingredients and stir to combine. Add chocolate chips.
- Pour batter into prepared pans. Bake for 60 minutes or until a toothpick is inserted into the middle of the loaf and comes out clean.
- Remove from pans and allow to cool.
Notes
Zucchini bread freezes well! Wrap in aluminum foil and keep in freezer if you have extra.
