Baked Pork Meatballs

Ingredients
- 1 lb ground pork (could substitute for any other ground meat of choice)
- 1/2 cup panko breadcrumbs
- 1/8 cup onion, finely diced
- 2 Tbsp minced garlic
- 1 egg
- salt and pepper to taste
Instructions
- Preheat oven to 400F. Prepare a baking sheet with parchment paper and non-stick spray.
- Combine all ingredients in a medium sized mixing bowl. You might find it easiest to use your hands.
- Roll mixture into 1-inch balls and place on prepared baking sheet.
- Bake for 15-20 minutes, or until the meatballs reach an internal temperature of 165F.
- Serve over rice with a veggie side or as part of a pasta dish.
