Baked Pork Meatballs

Baked Pork Meatballs

Ingredients

  • 1 lb ground pork (could substitute for any other ground meat of choice)
  • 1/2 cup panko breadcrumbs
  • 1/8 cup onion, finely diced
  • 2 Tbsp minced garlic
  • 1 egg
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400F. Prepare a baking sheet with parchment paper and non-stick spray.
  2. Combine all ingredients in a medium sized mixing bowl. You might find it easiest to use your hands.
  3. Roll mixture into 1-inch balls and place on prepared baking sheet.
  4. Bake for 15-20 minutes, or until the meatballs reach an internal temperature of 165F.
  5. Serve over rice with a veggie side or as part of a pasta dish.
