Cheesy Beef Enchiladas

Cheesy Beef Enchiladas

Ingredients

  • 6 10-inch tortillas
  • 1 lb ground beef
  • 1/2 red onion, diced
  • 1 packet taco seasoning
  • 1 15-oz can of refried beans
  • 1 jar (16 oz) enchilada sauce
  • 1 cup shredded Mexican-style cheese
  • cilantro for garnish, if desired

Instructions

  1. Preheat oven to 375F.
  2. Spray a 9x13 in pan with non-stick spray. Pour a thin layer of enchilada sauce on the bottom of the pan.
  3. Heat up a medium pan. Add non-stick spray or oil. Once heated, add diced onion and cook for 2-3 minutes. Add ground beef and cook through.
  4. Add a portion of refried beans and cooked ground beef to tortilla. Add a sprinkle of cheese and roll like a burrito. Replace with the rest of the tortillas and place in the prepared 9x13 in pan.
  5. Pour the remaining enchilada sauce over the tortillas. Add cheese on top.
  6. Bake for 15-20 minutes or until cheese is melted. Garnish with cilantro, if desired.
