White Chocolate Coconut Granola

White Chocolate Coconut Granola

Ingredients

  • 2 cups old-fashioned oats
  • 1/2 cup raw nuts (I used walnuts and pecans)
  • 2 Tbsp chia seeds
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • Mix ins - flaked coconut and white chocolate chips

Instructions

  1. Preheat oven to 350F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine oats, nuts, chia seeds, salt, and cinnamon.
  3. Pour in coconut oil and honey or maple syrup. Mix well.
  4. Pour mixture onto prepared baking sheet and bake for 20 minutes, stirring halfway through, or until the granola becomes crisp.
  5. Let the granola sit for at least 30 minutes before transferring to an air-tight container.
  6. Store in cool, dark place or in the freezer.
