Ingredients
- 1 small butternut squash, cut into small cubes
- 1 small white onion, roughly cut into slices
- 3-4 tomatoes, quartered
- 2 Tbsp olive oil
- salt, pepper, garlic powder to taste
- 4-5 fresh basil leaves
- 1/2 cup vegetable broth
Instructions
- Preheat oven to 400F. Line a sheet pan with aluminum foil or parchment paper.
- Add cubed butternut squash, onion, and tomato to sheet pan. Add olive oil and seasonings and toss vegetables.
- Bake for 30-45 minutes, or until butternut squash is tender.
- Add vegetables to blender along with basil and vegetable broth. Blend until smooth.
- Serve with pasta dish of choice.
