Butternut Squash Pasta Sauce

Ingredients

  • 1 small butternut squash, cut into small cubes
  • 1 small white onion, roughly cut into slices
  • 3-4 tomatoes, quartered
  • 2 Tbsp olive oil
  • salt, pepper, garlic powder to taste
  • 4-5 fresh basil leaves
  • 1/2 cup vegetable broth

Instructions

  1. Preheat oven to 400F. Line a sheet pan with aluminum foil or parchment paper.
  2. Add cubed butternut squash, onion, and tomato to sheet pan. Add olive oil and seasonings and toss vegetables.
  3. Bake for 30-45 minutes, or until butternut squash is tender.
  4. Add vegetables to blender along with basil and vegetable broth. Blend until smooth.
  5. Serve with pasta dish of choice.
