Buffalo Chicken Quesadillas

Buffalo Chicken Quesadillas

Ingredients

  • 1 lb chicken breasts or thighs
  • 3/4 cup buffalo sauce
  • 2 cups shredded Colby Jack cheese
  • 6 large flour or corn tortillas
  • cilantro for garnish, optional

Instructions

  1. Add chicken and buffalo sauce to a large bowl with a lid. Make sure that all of the chicken is coated in buffalo sauce. If you have time, allow chicken to marinate for at least 30 minutes.
  2. Preheat air fryer to 390F. Cook for 12 minutes or until chicken reaches an internal temperature of 165F. If you do not have an air fryer, you can bake the chicken in the oven or on the stove until it reaches the internal temperature of 165F.
  3. Once cooked, shred the chicken. I like to do this by adding it to a stand mixer with the paddle attachment.
  4. On a tortilla, layer shredded cheese and cooked shredded chicken. Heat in a panic press or on a skillet until golden brown on both sides and the cheese has melted.
  5. Garish with cilantro, if desired.

Notes

For a vegetarian option, use canned or prepared chickpeas.You could also substitute the chicken for tuna or shrimp.
