Buffalo Chicken Grilled Cheese

Ingredients
- 1/2 lb chicken thighs
- 2 Tbsp olive oil
- Salt and pepper
- 1/2 cup whipped cream cheese
- 1/4 cup hot sauce
- 1/2 cup + 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 12 slices sourdough bread
- 1/4 cup mayonnaise
- 1 Tbsp minced garlic or garlic paste
Instructions
- Add olive oil and salt and pepper to both sides of the chicken thighs. Grill the chicken until 165 degrees.
- In a stand mixer, add the cooked chicken thighs and mix until shredded.
- Add whipped cream cheese, 1/2 cup shredded mozzarella, shredded cheddar cheese, and hot sauce and mix until combined.
- Combine mayonnaise and minced garlic and spread on one side of each slice of bread.
- On a skillet over medium heat, place a slice of bread mayonnaise side down. Sprinkle with mozzarella and top with chicken mixture. Sprinkle more mozzarella if desired. Top with another slice of bread with the mayonnaise side facing up.
- Cook until golden brown on both sides (flip halfway) and cheese begins to melt.
Notes
- You can use any type of bread that you like. I love a sourdough grilled cheese!
- You can also use and type of cheese that you like.
- Feel free to sub chicken breasts for the chicken thighs.
- Use any hot sauce that you like.
