Ingredients
- 3 ripe medium bananas, mashed
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 eggs
- 2 tsp vanilla extract
- 1/2 cup plain Greek yogurt (or sour cream)
- 1 1/3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup mini chocolate chips, plus extra for sprinkling on top
Instructions
- Preheat oven to 325F and grease and line 9x5 inch loaf pan with parchment paper.
- In a bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a stand mixer bowl with paddle attachment, mix together the melted butter, brown sugar, and granulated sugar.
- Add in mashed bananas, eggs, yogurt, and vanilla extract.
- Fold the dry ingredients into the wet mixture. Then, fold in the chocolate chips.
- Pour the batter into your prepared loaf pan. Sprinkle chocolate chips on top, if desired. Bake for 1 hour or until a toothpick comes out with only a few moist crumbs.
- Allow to sit for at least 10 minutes before removing from loaf pan and serving.
