Chocolate Chip Banana Bread

Chocolate Chip Banana Bread

Ingredients

  • 3 ripe medium bananas, mashed
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 cup plain Greek yogurt (or sour cream)
  • 1 1/3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup mini chocolate chips, plus extra for sprinkling on top

Instructions

  1. Preheat oven to 325F and grease and line 9x5 inch loaf pan with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a stand mixer bowl with paddle attachment, mix together the melted butter, brown sugar, and granulated sugar.
  4. Add in mashed bananas, eggs, yogurt, and vanilla extract.
  5. Fold the dry ingredients into the wet mixture. Then, fold in the chocolate chips.
  6. Pour the batter into your prepared loaf pan. Sprinkle chocolate chips on top, if desired. Bake for 1 hour or until a toothpick comes out with only a few moist crumbs.
  7. Allow to sit for at least 10 minutes before removing from loaf pan and serving.
