Air Fryer Meal Prep Breakfast Sandwiches

Ingredients

  • 6 English muffins
  • 6 eggs
  • 6 slices colby jack cheese
  • 6 slices Canadian bacon or sausage patties
  • salt and pepper to taste

Instructions

  1. In a mixing bowl, combine eggs, salt, and pepper. Whisk to combine.
  2. Heat a medium sized pan with non-stick spray. Add egg mixture and cook until they are almost fully cooked. At this point, cover the pan with a lid and allow the eggs to finish cooking.
  3. Using a rubber spatula, cut the eggs into 6 slices inside the pan.
  4. Assemble each English muffin with a slice of cheese, Canadian bacon, and slice of egg mixture.
  5. Wrap each assembled sandwich with aluminum foil. Store in the freezer.
  6. When you are ready to eat the sandwich, heat the air fryer to 390F with the aluminum foil still on the sandwich. Air fry for 20 minutes, or until the sandwich reaches an internal temp of 165F. If it begins to get too crispy, remove the sandwich from the aluminum foil and wrap in a paper towel and microwave in 30-second increments.
