Ingredients

  • 1 cup crunchy peanut butter
  • 1 cup light corn syrup
  • 3/4 cup granulated sugar
  • 5 cups rice cereal
  • 1 cup butterscotch chips
  • 1 cups semi-sweet chocolate chips
  • 2 Tbsp butter

Instructions

  1. Line a 9x13 inch baking dish with parchment paper. Set aside.
  2. Add rice cereal to a large mixing bowl. Set aside.
  3. In a microwave safe bowl, add peanut butter, light corn syrup, and granulated sugar. Microwave in 30-second intervals, stirring in between, until the mixture is smooth.
  4. Pour the hot peanut butter mixture over the rice cereal. Stir to combine. Press the. mixture into the 9x13 inch baking dish.
  5. In another microwave safe bowl, add butterscotch chips, chocolate chips, and butter. Microwave in 30-second intervals, stirring in between, until melted.
  6. Spread the butterscotch chocolate mixture over the bars in an even layer. If desired, add a sprinkle of salt on top. Refrigerate until the chocolate hardens.
  7. Lift the sheet of bars out of the baking dish using the edges of the parchment paper. Cut into 20 bars.
  8. Store in an airtight container at room temperature.
