Ingredients
- 1 cup crunchy peanut butter
- 1 cup light corn syrup
- 3/4 cup granulated sugar
- 5 cups rice cereal
- 1 cup butterscotch chips
- 1 cups semi-sweet chocolate chips
- 2 Tbsp butter
Instructions
- Line a 9x13 inch baking dish with parchment paper. Set aside.
- Add rice cereal to a large mixing bowl. Set aside.
- In a microwave safe bowl, add peanut butter, light corn syrup, and granulated sugar. Microwave in 30-second intervals, stirring in between, until the mixture is smooth.
- Pour the hot peanut butter mixture over the rice cereal. Stir to combine. Press the. mixture into the 9x13 inch baking dish.
- In another microwave safe bowl, add butterscotch chips, chocolate chips, and butter. Microwave in 30-second intervals, stirring in between, until melted.
- Spread the butterscotch chocolate mixture over the bars in an even layer. If desired, add a sprinkle of salt on top. Refrigerate until the chocolate hardens.
- Lift the sheet of bars out of the baking dish using the edges of the parchment paper. Cut into 20 bars.
- Store in an airtight container at room temperature.
