Ingredients

  • 12 eggs

Instructions

  1. In a large pot, heat water until boiling.
  2. Once water is boiling, gently place eggs into pot. Cook uncovered for 30 seconds.
  3. Cover pot with lid and cook for an additional 12 minutes.
  4. Strain water from pot. Carefully place eggs in an ice bath and allow to sit for at least 15 minutes.
  5. Peel eggs immediately or store in the fridge until you are ready to peel.

Ingredients

  • 1/2 cup pepitas
  • 1 Tbsp minced garlic
  • 1/4 cup grated parmesan
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups kale
  • 2 Tbsp lemon juice
  • 1/2 cup olive oil

Instructions

  1. In a food processor, blend pepitas and garlic. Add parmesan, salt, pepper, kale, and lemon juice and blend. While food processor is running, slowly add olive oil until combined and smooth.

Notes

Freeze extras in an ice cube tray and add to future dishes.
