Lemon Orzo Pasta Salad

Lemon Orzo Pasta Salad

Ingredients

  • 1 cup dry orzo, prepared according to package
  • 1 (16 oz) can chickpeas, drained and rinsed
  • 1/2 red onion, diced
  • 1/2 cup cherry tomatoes, diced
  • 1/2 cup cucumber, diced
  • 1/2 cup peas
  • 1/4 cup green or black olives, sliced
  • feta or goat cheese, optional
For the dressing
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 Tbsp dijon mustard
  • 2 Tbsp honey
  • juice from 1/2 lemon
  • salt, pepper, garlic powder, and dried oregano, to taste

Instructions

  1. Combine all ingredients for the salad in a large bowl.
  2. To prepare the dressing, combine all ingredients in a Mason jar with a lid. Shake until combined.
  3. Pour dressing over the orzo salad when you are ready to serve.
