Ingredients
- 1 cup dry orzo, prepared according to package
- 1 (16 oz) can chickpeas, drained and rinsed
- 1/2 red onion, diced
- 1/2 cup cherry tomatoes, diced
- 1/2 cup cucumber, diced
- 1/2 cup peas
- 1/4 cup green or black olives, sliced
- feta or goat cheese, optional
For the dressing
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 2 Tbsp dijon mustard
- 2 Tbsp honey
- juice from 1/2 lemon
- salt, pepper, garlic powder, and dried oregano, to taste
Instructions
- Combine all ingredients for the salad in a large bowl.
- To prepare the dressing, combine all ingredients in a Mason jar with a lid. Shake until combined.
- Pour dressing over the orzo salad when you are ready to serve.
