Instant Pot Ham and Bean Soup

Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp minced garlic
  • 1 white onion, diced
  • 2 Tbsp tomato paste
  • 1 cup carrots, diced
  • 4 cups chicken broth
  • fresh thyme
  • salt and pepper, to taste
  • 1 lb spiral sliced or diced ham
  • 2 (15 oz) cans cannellini or great northern beans, drained and rinsed

Instructions

  1. Turn Instant Pot onto sauté mode. Sauté olive oil, garlic, onions, and carrots. Add remaining ingredients and pressure cook for 35 minutes followed by natural pressure release.
  2. If you are using a crock pot, add all ingredients and cook on high for 2 hours or on low for 4 hours.
