Instant Pot Ham and Bean Soup

Ingredients
- 2 Tbsp olive oil
- 2 Tbsp minced garlic
- 1 white onion, diced
- 2 Tbsp tomato paste
- 1 cup carrots, diced
- 4 cups chicken broth
- fresh thyme
- salt and pepper, to taste
- 1 lb spiral sliced or diced ham
- 2 (15 oz) cans cannellini or great northern beans, drained and rinsed
Instructions
- Turn Instant Pot onto sauté mode. Sauté olive oil, garlic, onions, and carrots. Add remaining ingredients and pressure cook for 35 minutes followed by natural pressure release.
- If you are using a crock pot, add all ingredients and cook on high for 2 hours or on low for 4 hours.
