Ingredients

  • 2 cups pasta, cooked
  • 1 can chickpeas, drained and rinsed
  • 1 cup mozzarella pearls
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, cut into half-moons
  • 1 bell pepper, diced
  • 1/2 cup green onion, sliced
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar

Instructions

  1. Combine all ingredients. Serve immediately or store in the fridge in an air-tight container.
