High Protein Lo Mein Bowls

Ingredients

  • 1/2 cup lo mein noodles
  • 2 Tbsp sesame oil
  • 1 Tbsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 2 tsp onion powder
  • salt and pepper
  • 1/2 lb chicken breast, diced
  • 4 eggs, soft boiled
  • 2 cups broth
  • 1 cup mushrooms
  • 1/2 cup bean sprouts
  • Sesame seeds, if desired

Instructions

  1. Prepare lo mein noodles as instructed on package.
  2. In a medium pan, heat sesame oil over medium heat. Add diced chicken and seasonings. Cook until chicken temps 165F.
  3. Heat up broth. Add 1 cup of broth to a bowl Add noodles to broth along with cooked chicken, 2 soft boiled eggs per bowl, mushrooms, and bean sprouts. Garnish with sesame seeds as desired.

Notes

Substitutions:

  • Lo mein noodles (could also use ramen)
  • Broth (could use any type of broth. Bone broth would add more protein!)
  • Chicken (could sub beef, pork, shrimp, tofu, or just leave out)
  • Mushrooms and bean sprouts (use any veggies you’d like!)
  • Sesame seeds (green onions would also be good!)
