High Protein Lo Mein Bowls

Ingredients
- 1/2 cup lo mein noodles
- 2 Tbsp sesame oil
- 1 Tbsp garlic powder
- 1 tsp chili powder
- 1 tsp paprika
- 2 tsp onion powder
- salt and pepper
- 1/2 lb chicken breast, diced
- 4 eggs, soft boiled
- 2 cups broth
- 1 cup mushrooms
- 1/2 cup bean sprouts
- Sesame seeds, if desired
Instructions
- Prepare lo mein noodles as instructed on package.
- In a medium pan, heat sesame oil over medium heat. Add diced chicken and seasonings. Cook until chicken temps 165F.
- Heat up broth. Add 1 cup of broth to a bowl Add noodles to broth along with cooked chicken, 2 soft boiled eggs per bowl, mushrooms, and bean sprouts. Garnish with sesame seeds as desired.
Notes
Substitutions:
- Lo mein noodles (could also use ramen)
- Broth (could use any type of broth. Bone broth would add more protein!)
- Chicken (could sub beef, pork, shrimp, tofu, or just leave out)
- Mushrooms and bean sprouts (use any veggies you’d like!)
- Sesame seeds (green onions would also be good!)
