Easy Shredded Chicken Quesadillas

Easy Shredded Chicken Quesadillas

Ingredients

  • 1 large (10 in) flour tortilla
  • 2 oz shredded chicken*
  • 2-4 oz shredded cheese (I like to use Colby Jack)
  • Optional - chili lime seasoning
  • Desired toppings - salsa, avocado, sour cream, etc

Instructions

  1. Heat large skillet over medium heat. Add non-stick spray or oil.
  2. On one side of the tortilla, sprinkle half of the shredded cheese, shredded chicken, and desired seasonings. You could also add beans and other desired fillings at this step as well.
  3. Fold tortilla in half and place on skillet. Cook until golden brown one side and flip and repeat on the other side.
  4. Serve with desired toppings.

Notes

My favorite way to shred chicken is simply to bake or grill chicken breasts or thighs with desired seasonings and then throw it in my stand mixer! The paddle on the stand mixer does a great job of evenly shredding the chicken.
