Crockpot White Chicken Chili

Crockpot White Chicken Chili

Ingredients

  • 1 lb chicken breasts
  • 1 can (15.5 oz) pinto beans
  • 1 can (15.5 oz) kidney beans
  • 1 can (15.5 oz) corn
  • 1 can (15.5 oz) diced tomatoes
  • 2 Tbps diced green chilis
  • 1 32 oz container of chicken broth
  • 2 Tbsp minced garlic
  • 1/2 white onion, diced
  • 4 oz cream cheese
  • salt and pepper to taste

Instructions

  1. Add all ingredients except cream cheese to Crock Pot.
  2. Cook on low for 8-10 hours or high for 4-6 hours.
  3. Remove chicken and shred. Add back into Crock Pot along with cream cheese and cook for 30-60 more minutes, or until cream cheese has combined with chili.
  4. Top with sour cream (or plain Greek yogurt), green onions, cheese, avocado, and other toppings of choice.

Notes

To easily lower sodium content of the dish, you can opt for low-sodium canned goods and broth.
