Chorizo, Black Bean, and Corn Quesadilla

Ingredients
- 1 large (10 in) flour tortilla
- 1/8 cup canned black beans, drained and rinsed
- 1/8 cup canned corn, drained and rinsed
- 2 oz chorizo sausage, cooked
- 2-4 oz shredded cheese (I like to use Colby Jack)
- Desired toppings - guacamole, salsa, sour cream, etc.
Instructions
- Heat large skillet over medium heat. Add non-stick spray or oil.
- On one side of the tortilla, sprinkle half of the shredded cheese, black beans, corn, and chorizo. Sprinkle the rest of the cheese on top of the ingredients.
- Fold tortilla in half and place on skillet. Cook until golden brown one side and flip and repeat on the other side.
- Serve with desired toppings.
