Chorizo, Black Bean, and Corn Quesadilla

Chorizo, Black Bean, and Corn Quesadilla

Ingredients

  • 1 large (10 in) flour tortilla
  • 1/8 cup canned black beans, drained and rinsed
  • 1/8 cup canned corn, drained and rinsed
  • 2 oz chorizo sausage, cooked
  • 2-4 oz shredded cheese (I like to use Colby Jack)
  • Desired toppings - guacamole, salsa, sour cream, etc.

Instructions

  1. Heat large skillet over medium heat. Add non-stick spray or oil.
  2. On one side of the tortilla, sprinkle half of the shredded cheese, black beans, corn, and chorizo. Sprinkle the rest of the cheese on top of the ingredients.
  3. Fold tortilla in half and place on skillet. Cook until golden brown one side and flip and repeat on the other side.
  4. Serve with desired toppings.
