Ingredients

  • 4 (10-inch) tortillas
  • 4 eggs
  • 1/2 lb bacon or sausage, prepared
  • 1/2 cup cotija cheese
  • 1/3 cup white or red onion, diced
  • 1/3 cup tomato, diced
  • 1/4 cup cilantro, chopped
  • salsa, sour cream, hot sauce, and other desired toppings

Instructions

  1. Create a scramble with eggs, breakfast meat, onion, tomato, and cilantro by cooking on medium-low heat in a skillet. Once the eggs are cooked through, add cotija cheese and allow to partially melt.
  2. Add scramble to tortillas and roll up into a burrito. Place burrito on the skillet and brown on all sides.
  3. Serve with desired toppings.
