Ingredients
- 4 (10-inch) tortillas
- 4 eggs
- 1/2 lb bacon or sausage, prepared
- 1/2 cup cotija cheese
- 1/3 cup white or red onion, diced
- 1/3 cup tomato, diced
- 1/4 cup cilantro, chopped
- salsa, sour cream, hot sauce, and other desired toppings
Instructions
- Create a scramble with eggs, breakfast meat, onion, tomato, and cilantro by cooking on medium-low heat in a skillet. Once the eggs are cooked through, add cotija cheese and allow to partially melt.
- Add scramble to tortillas and roll up into a burrito. Place burrito on the skillet and brown on all sides.
- Serve with desired toppings.
