Black Bean Chicken Quesadilla

Ingredients
- 1 large (10 in) flour tortilla
- 1/4 cup canned black beans, drained and rinsed
- 2 oz shredded or diced chicken*
- 2-4 oz shredded cheese (I like to use Colby Jack)
- Optional - chili lime seasoning
- Desired toppings - salsa, avocado, sour cream, etc
Instructions
- Heat large skillet over medium heat. Add non-stick spray or oil.
- On one side of the tortilla, sprinkle half of the shredded cheese, black beans, chicken, and desired seasonings.
- Fold tortilla in half and place on skillet. Cook until golden brown one side and flip and repeat on the other side.
- Serve with desired toppings.
Notes
For easy chicken prep, combine chicken tenderloins or breasts with olive oil and desired seasonings. Bake or air fry until the chicken reaches an internal temperature of 165F. To shred the chicken, use a hand mixer or stand mixer with a paddle attachment.
