Ingredients
- 1 lb salmon, cut into 1-inch cubes
- 2 Tbsp sesame oil
- 1/4 cup soy sauce
- 1 Tbsp sriracha
- 2 Tbsp honey
- 2 Tbsp sesame seeds
- 2 cups prepared white rice
- 1 medium avocado, sliced
- 1 English cucumber, thinly sliced
- 1/4 cup sriracha mayo (or Yum Yum sauce)
Instructions
- In a bowl, combine soy sauce, sriracha, honey, and sesame seeds. Add cubed salmon. Allow to marinate overnight if able, or at least for 20 minutes.
- Heat sesame oil in a medium pan. Add marinated salmon and allow fish to brown. Add remaining marinade and cook until thickened.
- Assemble bowls with rice, cooked salmon, avocado slices, cucumber slices, and sriracha mayo. Top with more sesame seeds, if desired.
