Sriracha Sesame Salmon Bowls

Ingredients

  • 1 lb salmon, cut into 1-inch cubes
  • 2 Tbsp sesame oil
  • 1/4 cup soy sauce
  • 1 Tbsp sriracha
  • 2 Tbsp honey
  • 2 Tbsp sesame seeds
  • 2 cups prepared white rice
  • 1 medium avocado, sliced
  • 1 English cucumber, thinly sliced
  • 1/4 cup sriracha mayo (or Yum Yum sauce)

Instructions

  1. In a bowl, combine soy sauce, sriracha, honey, and sesame seeds. Add cubed salmon. Allow to marinate overnight if able, or at least for 20 minutes.
  2. Heat sesame oil in a medium pan. Add marinated salmon and allow fish to brown. Add remaining marinade and cook until thickened.
  3. Assemble bowls with rice, cooked salmon, avocado slices, cucumber slices, and sriracha mayo. Top with more sesame seeds, if desired.
