Sheet Pan Roasted Potatoes and Carrots

Ingredients

  • 2 large yellow potatoes, diced into 1-inch pieces
  • 3-4 large carrots, cut into coins
  • 2 Tbsp olive oil
  • 2 tsp salt
  • 1 1/2 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp paprika

Instructions

  1. Preheat oven to 400F. Prepare a sheet pan with parchment paper and non-stick spray.
  2. Place diced potatoes and carrot coins on prepared sheet pan. Add olive oil and seasonings and use your hands or a rubber spatula to combine.
  3. Bake for 20-30 minutes, or until the vegetables are tender and the potatoes turn a golden brown.
