Ingredients
- 2 large yellow potatoes, diced into 1-inch pieces
- 3-4 large carrots, cut into coins
- 2 Tbsp olive oil
- 2 tsp salt
- 1 1/2 tsp garlic powder
- 1 tsp black pepper
- 1 tsp paprika
Instructions
- Preheat oven to 400F. Prepare a sheet pan with parchment paper and non-stick spray.
- Place diced potatoes and carrot coins on prepared sheet pan. Add olive oil and seasonings and use your hands or a rubber spatula to combine.
- Bake for 20-30 minutes, or until the vegetables are tender and the potatoes turn a golden brown.
