Shaved Beef Fajitas

Shaved Beef Fajitas

Ingredients

  • 1 lb shaved beef
  • 2 bell peppers (any color), sliced
  • 1 medium red onion, sliced
  • 2 Tbsp olive oil
  • 1 packet fajita seasoning
  • salt and pepper
  • taco-sized tortillas and desired toppings

Instructions

  1. Preheat oven to 375F. Place sliced bell peppers and red onion on a sheet pan. Cover in olive oil and fajita seasoning and use your hands or tongs to cover the vegetables completely.
  2. Bake the vegetables for 5 minutes. While they are baking, cover the beef with salt and pepper.
  3. Remove the sheet pan with the vegetables from the oven. Add the beef to the sheet pan and place back in the oven. Bake for 10 more minutes, or until the beef is cooked through and no longer pink.
  4. Serve with tortillas and desired toppings, such as sour cream and salsa.
