Ingredients

  • 1 lb ground chicken
  • 1/2 white onion, diced
  • 2 Tbsp fresh dill, chopped
  • 1/4 cup panko bread crumbs
  • 2 eggs
  • 1 Tbsp minced garlic
  • salt and pepper, to taste
  • 2 cups rice, prepared
  • 1 English cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup sliced green olives

Instructions

To make the meatballs
  1. Preheat oven to 385F.
  2. Combine ground chicken, diced white onion, dill, bread crumbs, minced garlic, eggs, and salt and pepper.
  3. Roll into 1-inch balls. Place on baking sheet prepared with non-stick spray.
  4. Bake for 10-15 minutes, or until meatballs reach an internal temperature of 165F.
Prepare bowls
  1. In a bowl, add rice, cucumber, tomato, bell pepper, avocado, feta, and green olives. Add a few meatballs. Top with tzatziki or other sauce of choice.
