Ingredients
- 1 lb ground chicken
- 1/2 white onion, diced
- 2 Tbsp fresh dill, chopped
- 1/4 cup panko bread crumbs
- 2 eggs
- 1 Tbsp minced garlic
- salt and pepper, to taste
- 2 cups rice, prepared
- 1 English cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 avocado, diced
- 1/2 cup crumbled feta cheese
- 1/2 cup sliced green olives
Instructions
To make the meatballs
- Preheat oven to 385F.
- Combine ground chicken, diced white onion, dill, bread crumbs, minced garlic, eggs, and salt and pepper.
- Roll into 1-inch balls. Place on baking sheet prepared with non-stick spray.
- Bake for 10-15 minutes, or until meatballs reach an internal temperature of 165F.
Prepare bowls
- In a bowl, add rice, cucumber, tomato, bell pepper, avocado, feta, and green olives. Add a few meatballs. Top with tzatziki or other sauce of choice.
