Ingredients

  • 2 Tbsp olive oil
  • 1 lb chicken breast, roughly cut into cubes
  • 1/2 cup plain Greek yogurt
  • juice from 1/2 lemon
  • salt, pepper, garlic powder, onion powder
  • 2 cups quinoa, prepared*
  • 2 heads romaine lettuce
  • 2 roma tomatoes, diced
  • 1 cucumber, sliced
  • 1/2 red onion, pickled
  • lemon wedge, if desired
  • tzatziki sauce**

Instructions

  1. Add olive oil to a pan over medium heat.
  2. While the pan is heating up, add cubed chicken to a mixing bowl with Greek yogurt, lemon juice, and seasonings. Mix until combined. You could also prep the chicken ahead of time and marinate before making this dish.
  3. Add chicken to pan and cook until heated through and it reaches an internal temperature of 165F.
  4. Place lettuce in a bowl. Top with chicken, quinoa, vegetables, and tzatziki sauce. Add any other desired vegetables you would like.

Notes

*I like to make my quinoa with bone broth for added protein.

**You can either make tzatziki sauce yourself or purchase it pre-made.
