Ingredients
- 2 Tbsp olive oil
- 1 lb chicken breast, roughly cut into cubes
- 1/2 cup plain Greek yogurt
- juice from 1/2 lemon
- salt, pepper, garlic powder, onion powder
- 2 cups quinoa, prepared*
- 2 heads romaine lettuce
- 2 roma tomatoes, diced
- 1 cucumber, sliced
- 1/2 red onion, pickled
- lemon wedge, if desired
- tzatziki sauce**
Instructions
- Add olive oil to a pan over medium heat.
- While the pan is heating up, add cubed chicken to a mixing bowl with Greek yogurt, lemon juice, and seasonings. Mix until combined. You could also prep the chicken ahead of time and marinate before making this dish.
- Add chicken to pan and cook until heated through and it reaches an internal temperature of 165F.
- Place lettuce in a bowl. Top with chicken, quinoa, vegetables, and tzatziki sauce. Add any other desired vegetables you would like.
Notes
*I like to make my quinoa with bone broth for added protein.
**You can either make tzatziki sauce yourself or purchase it pre-made.
