Ingredients
- 1 lb flank steak, cut into 1/4 inch thick slices
- 1 bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup olive oil
- juice from 1/2 lime
- 2-3 Tbsp taco or fajita seasoning
Instructions
- Preheat oven to 400F.
- In a mixing bowl, add all ingredients. Allow to marinate for 15-20 minutes, or a few hours if you have time.
- Prepare a baking sheet with aluminum foil and non-stick spray. Pour steak and vegetable mixture.
- Bake for 10-15 minutes or until steak is no longer pink in color.
- Serve with small tortillas, nachos, as part of a burrito, etc. Top with desired toppings such as sour cream (or plain Greek yogurt), lime wedges, salsa, cheese, cilantro, fresh tomato, avocado, etc.
