Crock Pot Street Corn Dip

Ingredients

  • 8 oz cream cheese
  • 1 (15 oz) can corn, drained and rinsed
  • 1 (10 oz) can RO-TEL
  • 4 oz pepper jack cheese
  • 1/4 cup cilantro, roughly chopped
  • 4 oz cotija cheese
  • 2 Tbsp Tajin

Instructions

  1. Add cream cheese, corn, RO-TEL, pepper jack cheese, cilantro, and tajin to a crockpot. Cook on high for 2 hours, stirring at least once.
  2. Add cotija cheese and stir. Allow to cook until cotija is melted, about 1 more hour.
  3. Serve with corn chips or tortilla chips
