Ingredients
- 8 oz cream cheese
- 1 (15 oz) can corn, drained and rinsed
- 1 (10 oz) can RO-TEL
- 4 oz pepper jack cheese
- 1/4 cup cilantro, roughly chopped
- 4 oz cotija cheese
- 2 Tbsp Tajin
Instructions
- Add cream cheese, corn, RO-TEL, pepper jack cheese, cilantro, and tajin to a crockpot. Cook on high for 2 hours, stirring at least once.
- Add cotija cheese and stir. Allow to cook until cotija is melted, about 1 more hour.
- Serve with corn chips or tortilla chips
