Ingredients
- 1 Tbsp olive oil
- 1 medium yellow onion, diced
- 1 cup carrots, sliced or shredded
- 1 cup celery, diced
- 2 Tbsp minced garlic
- 8 cups chicken broth
- 2 1/2 cups shredded cooked chicken
- 2 tsp black pepper
- 1 tsp salt
- 1 1/2 tsp dried oregano
- 1 1/2 cups noodles, any type
Instructions
- In a large Dutch oven or pot, over medium heat, add olive oil. Add onion, carrots, and celery and sauté for about 4 minutes. Add in the garlic and sauté another minute.
- Add broth, shredded chicken, salt, pepper, and oregano. Bring to a boil.
- Add the noodles and simmer until pasta is al dente.
- Serve warm. Store leftovers in the refrigerator.
