Chicken Noodle Soup

Chicken Noodle Soup

Ingredients

  • 1 Tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 cup carrots, sliced or shredded
  • 1 cup celery, diced
  • 2 Tbsp minced garlic
  • 8 cups chicken broth
  • 2 1/2 cups shredded cooked chicken
  • 2 tsp black pepper
  • 1 tsp salt
  • 1 1/2 tsp dried oregano
  • 1 1/2 cups noodles, any type

Instructions

  1. In a large Dutch oven or pot, over medium heat, add olive oil. Add onion, carrots, and celery and sauté for about 4 minutes. Add in the garlic and sauté another minute.
  2. Add broth, shredded chicken, salt, pepper, and oregano. Bring to a boil.
  3. Add the noodles and simmer until pasta is al dente.
  4. Serve warm. Store leftovers in the refrigerator.
