Ingredients
- 1 slice sourdough bread, toasted
- 1/2 avocado
- 1 egg, soft boiled (see below)
- everything but the bagel seasoning, if desired
Instructions
- Spread avocado onto a slice of sourdough or other preferred bread.
- Mash soft boiled egg onto avocado. Top with everything but the bagel seasoning.
How to make soft boiled eggs
- Bring a pot with water to a boil.
- Add eggs to the boiling water. Reduce heat and cover with a lid. Cook for 7 minutes.
- Remove eggs from water and place in an ice bath for 15 minutes.
- Peel and serve or refrigerate.
